Trey’s Snow Cream Recipe

Possibly the EARLIEST this has EVER been posted!

Here’s what you need:

Large bowl to collect snow in

Slotted spatula

Large Mixing Bowl

Can of Pet Milk

1 teaspoon vanilla extract

1 cup sugar

Go out into the snow with your collecting bowl and slotted spatula.  Find you some snow that has not been bothered and, using your slotted spatula, scoop up snow — being careful not to get so deep that you collect grass, leaves and dirt from the bottom.

Note:  If it has been a day or so since it snowed, sometimes thawing and refreezing will cause ice to form on top of the snow.  If that happens, use your spatula to scrape off a thin layer of snow off the top before you start collecting snow.  Same if some sleet has fallen on top of the fallen snow — scrape the sleet off.  You don’t want ice in your collected snow if you can help it.

Mix the Pet Milk, Sugar and Vanilla Together in your mixing bowl.  Make sure the sugar is dissolved.

Begin adding snow and, as you do, mix it.  Add and mix.  Add and mix.  Continue adding until you get the snow cream to the desired thickness.

Pour into cups or bowls, eat and enjoy.

Jim Frigo Corn Out of a Can Recipe

Head to your favorite supermarket.

Head to the canned vegetables aisle and pickout two cans of your favorite corn.  I prefer name brand, and I like “shoe peg”.

At home, open both cans, dump into a casserole dish, add butter or salt/pepper to taste.

Heat, and enjoy.

CarolAnne’s Sweet Potato Casserole Recipe

Sweet Potato Mixture Ingredients:

1-1lb can of Bruce’s Yams

1 Cup Sugar

2 Eggs

1/2 Cup Evaporated Milk

1 tsp. Vanilla

Pinch of Salt

1/3 Cup butter

Topping Ingredients:

1/3 Cup Flour

1  Cup Brown Sugar

1 Cup Flaked Coconut

1 Cup Chopped Pecans

1/3 cup Butter (melted)

Using a mixer, combine all sweet potato mixture ingredients until smooth. Pour into 2 qt. casserole dish.

Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350 degrees for 40 minutes.

Carol Anne’s Notes:

I usually double this recipe to take to work which is about 20 people.

If you do double it, I reccommend making the sweet potato mixture as written just go through it twice! It makes the mixture smoother doing it a half at a time!

You can use two cans of yams (2lbs) for just one batch if you desire a thicker mixture.

If it last a second day… it’s great leftover too!

Momma’s Potato Salad (From Trey)

Now, let me offer a disclaimer right up front.  There is NO written recipe for Mom’s Potato Salad.  I watched her make it over and over and over as a kid, and I’ve made many attempts to make it as an adult.  Sometimes I hit a home run, sometimes it’s just not as good as other times.  But, if it all comes together, I think you’ll like it!

Here’s what you’ll need:

6-7 medium size red potatos peeled boiled and cubed

3 medium eggs hard boiled peeled and cubed

About a half of a good size red onion cut into small pieces

Several sweet pickles cut into small pieces.  I’m not sure how many to tell you to do.  When the pickles used to be really big a couple would do.  Now the sweet pickles are small and it takes at least 5-6 to really make an impact.

Combine all of the ingredients into a mixing bowl.

Add about 2-3 heaping tablespoons of Miracle Whip.  (Not mayonaise, and not some off-brand salad dressing, and NOT Miracle Whip LITE!  Spend a little and get the good stuff!)

Whip the ingredients with the Miracle Whip. 

Pour in a little sweet pickle juice and a 1/2 -1 cup of sugar.  Start easy.

Mix all of the ingredients together.

Taste it.  If it doesn’t taste good to you, it’s going to be the blend of Miracle Whip, sweet pickle juice and sugar.  That’s the secret sauce, and it takes just the right blend to make it perfect!

Hillary Scott of Lady Antebellum will grace the December cover of Redbook, and inside she talks about her upcoming wedding and the fact that her fiancée, Chris Tyrrell has taken on a lot of the planning since her schedule is so hectic.  Hilary’s Lady Antebellum band mates, Charles and Dave, will be at her wedding, but she says, “I’m not asking them to sing or play an instrument. I’m not putting anybody I love to work on my wedding day.  I even told our band and crew that I know it’s a weekend off that we would normally have, so if they want to take a vacation and not come, they’re not going to hurt my feelings.”  Hillary also talks about being the only girl in Lady Antebellum.  She says, “There are moments when I’m like, ‘If I hear one more ‘That’s what she said’ joke, I’m going to pull my hair out. But for the most part, the guys are so easygoing and there’s no drama.”  Redbook is actually asking readers to vote for the cover shot that will appear on the magazine when it hits stands on November 15th.  You can click here to cast your vote for one of four choices.
